In Sight of Beautiful Mt. Hood: Pt II

Blessings on this cold and very rainy (at least here) Maundy Thursday!
(yes I am late posting it)

I am busy today baking some hard-'boiled' eggs for Easter -- but since my DH is now aware of their presence, they probably won't last that long. I thought about dying them, but I don't have any red cabbage and I am not ecstatic about braving the rain right now.  I keep forgetting this is the Pacific NW where real summer weather only arrives after July 4th :)

Other items on the menu are glazed ham (my mom's favorite way of cooking ham), some kind of potato dish, asparagus and an Easter lamb cake (I am finally using that mold I bought years ago at Goodwill)...

I was going to make a Dutch Baby Pancake for breakfast on Easter, but now I am torn between vafler, crepes or the pancake. I know, whatever I make, it's got to have lemon as I am craving that yummy flavor right now (links to recipes below)

Speaking of lemon, I cooked last night's salmon using Teresa's recipe.. the combo of lemon, sour cream, salt, pepper and salmon was -- well delish as Teresa says:)

And now back to our road trip while the eggs cool down...

This burner brings back memories of trips to southern Oregon to visit family.
There were a lot of them then
and they were used in that day. Not many are left so I always get very excited when I spot one!

Even though we have year round blooms in our garden,
I just can't seem to get enough color--
and then spring comes
and EVERYTHING seems so bright and lovely!
I wonder if I am becoming a snowbird?
Could it be???

I NEED a horse again.
OK, I want a horse but perhaps I will just be satisfied with a trail ride--
if we ever get some more spring sunshine that is.
 
We are now up to 5 snake sightings in a ...
'unfortunately' one is no longer with us
(my car is very, very 'naughty' it seems...
but honestly I didn't know till my hubby told me this morning)

I LOVE Norwegian waffles--they are thin, crisp, and with the right wafflemaker, heart-shaped.

GREAT photos, Aimee! I'm so glad my salmon recipe worked out for you! The sour cream is a tangy balance for the rich salmon. I'd love to have a horse again too. I had my own quarter horse named Lady. A trained barrel racer.

This post has everything Spring and the recipes all look fantastic. I can't wait to see your lamb cake :) I went for carrot as I am craving it so much, I also love lemon. That will be next week.

I badly needed some spring today being that we're 'enjoying' those April showers that bring May flowers:) Carrot cake sounds yummy--I wonder if it would work for the lamb cake mold...I decided to definitely hold off on baking it till Small One is here next week. Wish us luck!

It really is although it looks like we lost a lot of the blossoms on at least one of our fruit trees (can you tell I wasn't ready to let them go yet?)

Those are ome beautiful pictures Aimee. We had salmon tonight at the lake. I had planned to grill it like Teresa's recipe. (I was lucky enough to have it at her house at Christmas.) Two things went wrong. I forgot to bring the sour cream to the lake and the wind was blowing like crazy so I ended up baking it in the oven with little butter and salt and pepper. Still good with some brown rice on the side.

Thank you for your sweet comment on my blog. I hope you and your family have a blessed Easter tomorrow. We'll be up early tomorrow to head back to town for breakfast at church before our celebration of the Ressurection. Hallelujah! What a Saviour!

I've often cooked salmon that way--except I normally used olive oil. Salmon is SO yummy as is rice.

OH thank you Aimee for my taste of the Pacific Northwest (both the beautiful scenery and the recipes). Those flowers are amazing but of course it is the Mountain that gets my heart pitter-pattering....it is time to get back to the land of altitude! I'm ready.
