What am I?

I am one of the easiest plants to grow;
I seem to thrive on neglect.

I like to self sow;
you'll find lots of babies growing near a mature plant.

You can eat my leaves;

they taste a bit like cucumber.

But Aimee grows me mostly because she just thinks I'm pretty.
